Rice flour is a fine flour made from ground rice. Rice flour can be used in a wide variety of culinary uses and is a very popular base for noodles in many Asian cuisines. It can also be used as a thickener in sauces, as a breading for fried dishes and as the base for various baked goods.
Rice flour is very commonly used in gluten free baked goods to give them structure and substance, but it is also a popular addition for non gluten free baked goods because of its unique and slightly sandy texture. For instance, a small amount of white rice flour in a buttery shortbread recipe can make that shortbread extra tender and crumbly, with a melt-in-your-mouth feeling. Rice flour is a particurlaly good substitute for wheat flour, which cause irritation in the digestive systems of those who are gluten intolerant.
LEMON TEA CAKE
Ingredients for Cake
2 cups Gluten Free Baking Flour
3/4 cup Rice Flour
2 Tbsp Baking Powder
1 tsp Salt
3/4 cup melted unscented coconut oil
1 cup sugar
1 cup Rice Milk
1/2 cup Applesauce
2 tsp Vanilla Extract
2 Tbsp lemon extract
Ingredients for Icing
500 grams Powdered Sugar
1/4 cup fresh Lemon Juice (more if it's too thick)
red colouring (can use bean souce - 3 tsp)
Instructions for Cake
Preheat oven to 350 degrees. Brush a loaf pan and set aside.
In a medium bowl measure and whisk dry ingredients. Add wet ingredients and whisk until batter is smooth. Pour batter into reserved pan. Place in the oven and baker for 20 minutes, rotate, and continue baking another 15 minutes or until a toothpick inserted in the center comes out clean.
Remove from oven and allow to cool for 45 minutes before slicing. Serves 10.
Instructions for Icing
Mix all ingredients together until well combined and smooth.
